Summer Fruit Salsa and Pesto Hummus
For when you’re not quite ready for dinner, but you need a hearty snack, we highly recommend Half Baked Harvest’s Summer Fruit Salsa and Pesto Hummus. Tieghan, who is the heart and soul behind Half Baked Harvest says that the salsa/hummus combo is a “face plant worthy combo.” To us, it tastes like the best parts of summer rolled into one dish. Oh, so very good!

Fish Tacos with Summer Salsa
Fish tacos are an office favorite so when we found this dish from Rachel Ray, we were ecstatic! Rachel recommends using halibut as it is a nice white, meaty fish and Hass avocados because they are “richer and more flavorful than their larger, lighter green cousins.” This dish is so delicious and easy to make, it’s well worth trying.

Caponata Sandwiches with Lemon Garlic Aioli
If this dish doesn’t make you appreciate summer, we’re not sure what will. These mouth-watering sandwiches come from The Earthen Table and we can’t thank blogger Kelley enough for making this recipe. Kelley calls her Caponata Sandwiches with Lemon Garlic Aioli her “homage to summer and her bounty.” Absolutely worth making!

To end, we leave you with dessert, but not just any dessert. This Blueberry and Apricot Crumble from The Kitchn will leave you weak in the knees.
